Roast Cod. A simple and great meal

Roast cod has become a popular dish in restaurants over the last ten years. Yet somehow does not often find its way to the dining room table. There seems an erroneous belief that it is an expensive fish. This may not be true. Two portions of cod generously sized cost only £4 even in Waitrose not known for its discounted prices.

A good example of a recipe would be to place the cod in a baking tray and cover with a seasoning such as creole . A moderately spicy yet not overpowering taste. Roasted vegetables with a small amount of oil can be added in the same tray. To complete the meal a green salad with balsamic makes a quick easy and healthy dinner.

Homemade Scones. The Great British Bakeoff

An amateur contender but excellent scones. Is there any better smell than homemade baking? These photographs were taken some time ago and have been sitting on my desktop computer. The TV series has clearly rekindled excitement in baking again and even Nigella Lawson has said that the creations on TV are beyond her skills. Enjoy.
